Just yesterday I threw together this simple pasta dish for lunch; I didn't have a ton of time so I needed something easy, as well as a way to use up some food in the fridge.

Here's the breakdown: while I boiled my penne rigate I simmered a pre-made Marinara sauce with a bit of basil, and some shredded rotisserie chicken from the night before. By the time my pasta was cooked I tossed it into the warmed-through sauce, then piled in into my bowl and topped it off with a bit more basil, a handful of pine nuts (which I would have toasted if my small fry-pan wasn't already being used), and a shaving of my favorite black pepper pecorino (from Fresh Market).
This was the perfect hearty and satisfying meal I needed in the middle of the day before I went off for my nannying duties. Enjoy!
