What’s more American than a gooey grilled cheese dipped into a steaming bowl of tomato soup? Honestly…not much!
In the spirit of ‘Murica we celebrated our 4th of July with a twist on a well-known favorite. We jazzed up the traditional ham-and-cheese by substituting the usual Kraft American with sliced Brie and topping it off with orange marmalade. Ok. So maybe this isn’t as American we thought.
For the soup component, we chose a refreshing vegetable gazpacho, perfect for a hot summer day and sliced up a buttermilk pie, drizzled with blackberry sauce, after watching some fireworks.

Step One: Chopping, Chopping, and More Chopping
For the gazpacho, the bulk of the work comes from dicing the vegetables. Don’t worry if the pieces are not all the same size. The food processor will take care of that…unless your food processor is too small.

Batches are ok! You would rather have to spend extra time blending smaller quantities than cleaning tomato juice out from the depths of your kitchen. Trust us.
Once the soup is done, pop it into the fridge to chill.
Step Two: Pie Crust
We had made this same pie recently and had leftover prepared dough in the freezer. However, it is very easy to make and, for the most part, is fool proof.
In our down time while the soup was chilling, we mixed together the few ingredients for the filling of the pie and poured it into the pie shell. This is definitely the ideal pie to make when pressed for time–it’s quick, easy, and delicious.

Although this panini has a lot of components, it is pretty simple to put together–especially when you have lots of hungry hands helping. The flavors that come together give the sandwich a unique and gourmet taste.
Once the soup is done, pop it into the fridge to chill.

Once the soup is cooled to your liking, pull it out to serve with a variety of toppings: extra veggies, a dollop of sour cream, a squirt of Sriracha, and chopped cilantro. If you wanted to make the gazpacho its own meal, adding shrimp or chicken would be a great addition–feel free to get creative with it!
